HIMACHALI RASOI
One of the most beloved and anticipated experiences is the Himachali Rasoi inspired by the famed Dham feast of Himachal. It is prepared by local staff headed by Hema aunty, their ‘Woman Friday’ in the words of Robinson Crusoe. In the open-walled kitchen built in the traditional style of the region, this adobe or mud hut becomes the locus of activity as the night falls, with the fragrance of Makki di Roti made from fresh flour at the local Pan-Chakki (flour mills operated by running water) dripping in ghee and Saag made from the farm-fresh vegetables of our Organic Garden ticking the boxes of sustainable immersion. You could try your hand at cooking as your family sits around the hearth as fresh hot roti flies off the pan to your plate. Adding a zing to the feast is the old music playing on our Caravan radio or dance along with our Pahadi Nati, folk dancers and singers to the cheerful music of Kangra. Himachali Rasoi happens every night for all group sizes.

BAR: Enjoy a bottle of wine during the Sundowner or enjoy our special cocktails around a bonfire!
